vegetarian soup with rice
My kids usually aren’t very excited about eating vegetables, but in this Moroccan vegetarian soup with rice, they love them. This hearty soup is full of nutritious rice, vegetable and olive oil. it is easy and simple to make.
Some people in Morocco use a variety of seasonal vegetables, but you can surely cook what is available.
You don’t need to saute the onion. Just cut it coarsely and add all the cut veggies and let them cook on medium heat.
The whole recipe takes less than an hour to be prepared. It is easy on the pocket, meatless and a healthy homemade option especially for kids.
Vegetarian Soup with Rice; Moroccan Vegetable Chorba
Ingredients
1 medium onion, coarsely cut
1 medium tomato, chopped
2 zucchini, cut
1 medium potato, coarsely cut
a small piece of pumpkin, coarsely cut
3 medium carrots, coarsely cut
100 gr. rice
2 tb.sp. chopped parsley
1 tb.sp. tomato paste
100 ml. olive oil
black pepper
salt
turmeric
ginger
thyme
2 liters of water
Directions to make Moroccan Vegetarian Soup with Rice
put all the cut vegetables, rice and water in a soup kettle. cook on medium heat for 35 to 45 min, or until vegetables are tender.
Add all of the spices, tomato paste, and olive oil. Blend and simmer for 5 to 10 min. serve it warm.
