  1. Start by putting the green tea (gunpowder) in a teapot, then add a little boiling water and leave to infuse for about a minute. The contents are poured into a small tea glass and left to rest on the tray.
  2. We re-fill the teapot with boiling water, then we throw away the tea, so that the bitter taste of the gunpowder disappears.
  3. We reintroduce the small glass of tea into the teapot. Then place the teapot filled with water on the stove for 5 minutes, or pour boiling water directly into the teapot to fill it.
  4. Add the mint leaves and the big sugar cubes.
  5. Then, everything is in the gesture: the tea is poured into a first glass, holding the teapot high, in order to add air and make it “foam”. Put the small glass back in the teapot and repeat the operation as many times as necessary for the sugar and mint to be well mixed (two or three times are sufficient).
  6. Once the tea is well mixed, all the guests are served.
